Sweet and Sour Squirrel Fish 松鼠桂鱼

This dish features a whole mandarin fish shaped like a squirrel, fried until crispy and topped with a sweet and sour sauce.

Ingredients:

  • Mandarin fish: 1 (cleaned)
  • Vinegar: 2 tbsp
  • Sugar: 2 tbsp
  • Ketchup: 2 tbsp
  • Cornstarch: 2 tbsp

Instructions:

  • Score the fish diagonally and coat in cornstarch.
  • Deep fry until crispy, set aside.
  • Simmer vinegar, sugar, and ketchup until thick, then pour over the fish.
