Mao’s Braised Pork 毛氏红烧肉

A famous dish from Mao Zedong’s hometown, this sweet and savory braised pork belly is rich, tender, and infused with caramelized sugar and soy sauce.

Ingredients:

  • Pork belly: 500g (cubed)
  • Sugar: 2 tbsp
  • Soy sauce: 2 tbsp
  • Star anise: 2
  • Ginger: 3 slices

Instructions:

  • Blanch pork belly in boiling water, drain, and set aside.
  • Heat sugar in a pan until it caramelizes, then add pork belly and stir.
  • Add soy sauce, ginger, star anise, and water to cover. Simmer for 40 minutes.
