Hunan-Style Aubergine 湘味茄子

A simple yet flavorful dish of aubergine stir-fried with garlic, soy sauce, and chili.

Ingredients:

  • Aubergine: 300g (sliced)
  • Garlic: 2 cloves (minced)
  • Chili paste: 1 tbsp
  • Soy sauce: 1 tbsp

Instructions:

  1. Fry aubergine until soft, then remove.
  2. Stir-fry garlic and chili paste, add aubergine back with soy sauce.
  3. Stir well and serve.
