Hu Shi’s Pot (胡适一品锅) is a traditional dish with origins in Anhui cuisine, named after the famous Chinese scholar Hu Shi. This dish is a rich, flavorful stew made by layering a variety of ingredients, such as pork, tofu, mushrooms, and vegetables, and slowly braising them in a clay pot. The name "Yipin" refers to the prestigious rank of "first class" in ancient China, symbolizing the high status and importance of the dish. Known for its warm, comforting flavours, Hu Shi’s Pot is often enjoyed during cold weather and family gatherings, showcasing the harmony of ingredients and the depth of traditional Chinese cooking.
Ingredients
- 200g Chicken (cut into small pieces)
- 200g Pork (cut into small pieces)
- 200g Beef (cut into small pieces)
- 200g Fish(sliced)
- 10 dry shitake mushroom (soaked, then sliced)
- 200g Bamboo shoots(sliced)
- 200g Tofu (cut into blocks)
- 2 Eggs (boiled and halved)
- 100g rice noodles (soaked until soft)
- Green vegetables as needed (such as cabbage, spinach, etc.)
- Chives, ginger, garlic as needed
Seasonings: salt, soy sauce, cooking wine, chicken essence, pepper, five-spice powder, etc.
Instructions
- Prepare the ingredients: Cut the chicken, pork, and beef into small pieces, slice the soaked mushrooms, bamboo shoots, tofu, and halve the boiled eggs. Soak the glass noodles until soft and wash the greens.
- Stir-fry the base: Heat some oil in a pot, stir-fry the chives, ginger, and garlic until aroma comes out, then add the chicken, pork, and beef and stir-fry until they change colour.
- Seasoning: Add cooking wine, soy sauce, salt, chicken essence, pepper, and five-spice powder, stir well to ensure the meat pieces are well-seasoned.
- Add other ingredients: Add the mushrooms, bamboo shoots, tofu, and glass noodles in sequence, continue to stir-fry.
- Simmer: Add some water to cover all the ingredients. Bring to boil, then reduce the heat to simmer until the meat is tender and the soup is thickened.
- Add eggs and greens: Add the boiled eggs and washed greens to the pot, continue to simmer for a few more minutes until the greens are tender.
- Serve: Finally, adjust the taste to ensure the saltiness is just right, then turn off the heat, transfer the Hu Shi's First-Class Pot to a large bowl, and serve.
