Dezhou Braised Chicken 德州扒鸡

A famous Shandong dish where chicken is slow-cooked in an aromatic, savory broth.

Ingredients:

  • Whole chicken: 1 (about 1.5kg)
  • Soy sauce: 3 tbsp
  • Star anise: 2
  • Cinnamon stick: 1
  • Ginger: 3 slices

Instructions:

  • Blanch the chicken, then simmer in a pot with soy sauce, spices, and water for 1.5 hours.
  • Baste occasionally for a rich, even flavour.
